Induction Ranges
An induction range is a much faster, safer, and more energy-efficient cooking appliance that leaves any gas range in the dust. Induction ranges use electromagnets to heat any pot or pan directly, making cooking faster. Doing so cooks food more efficiently and doesn’t send any wasted heat or other pollutants into the air. Overall, these ranges have better temperature control than any gas or electric option while being energy-efficient and improving air quality.
You can cook anything you’d usually cook on a typical gas range, which doesn’t limit you. Plus, you can rest easy knowing that nearly all the heat you produce with the induction range goes straight to the food, unlike gas ranges.
How Do They Work?
In the simplest form, an induction range is an electric range that uses magnetism to make heat. Magnetic coils inside generate a magnetic field that sends heat directly onto the cookware. The heated base of an induction range is the only area that gets hot and only works when it detects a pot or pan.
Since the base only sends heat to cookware, it makes it safe for you to touch the area and not burn yourself. It’s an automatically safer option for family members such as children and the elderly since there’s no open flame or red hot coils.
Bay Area & State Regulations
You may be surprised to hear that several cities such as Berkeley, Oakland, San Jose, and parts of Los Angeles have already implemented measures to officially prohibit the installation of gas infrastructures in new building constructions to help fight climate change and protect public health. This means any new building cannot legally have any gas-powered appliance. Gas appliances are a significant source of harmful emissions, thus making induction ranges a suitable option.
In the Bay Area, San Francisco was one of the significant cities ready to change harmful pollutants in 2019/20. Sean Keighran, the Residential Builders Association President, would then propose the ban of natural gas in all new construction. It would later gain backlash as many restaurant owners did not want to comply with the ban as some cooking is not the same on electrical appliances.
However, guidelines and areas have been amended to allow hybrid appliances so some restaurants can continue to use gas. Since June 2021, all new constructions are gas-free.
The change will only continue to grow and spread as even in Los Angeles, a unanimous vote in May of this year allowed for the ban of all gas appliances in most new homes and businesses. Los Angeles and 50 other cities are making the change for the better of our planet and our health. From what we can tell, the ban plan would eventually require the installation of all-electric appliances in homes by 2026 and in new businesses by 2029.
